Denver’s The Ginger Pig brings Asian street food to Boulder

Hockey player-turned-lawyer-turned-chef Natascha Hess opened Asian street food truck The Ginger Pig in 2016 at Boulder’s Rayback Collective food truck park. The pig has since made nearly every local top list, earned a 3-star restaurant review in these pages, operated a now-closed stand in Boulder’s Rosetta food hall, and opened a physical outlet in Denver. Berkeley neighborhood in the midst of a global pandemic.

And starting this fall, the pig will return to Boulder, opening a take-out outlet on The Hill in the former La Choza space.

“It’s crazy that we’re going back to Boulder,” Hess said. “If you had spoken to me two months ago, I would have been too exhausted to do this. It’s an exciting way to grow our business and bring our food back to Boulder. We’ve spent so much time there, and a lot of people will be glad we’re back and can be found on DoorDash and Grubhub.

Hess arrived at this location while looking for a Boulder home for the food truck, which has spent most of the past two years parked outside The Ginger Pig’s restaurant in Denver. She considered returning to Rayback, but when she found the take-out outlet on The Hill – and learned she could add rooftop seating in the future and a new ghost kitchen concept that was still quiet – the choice was clear. Especially since more than half of its business is in the form of takeout and delivery these days, the spot made perfect sense.

Along with the red curry rice balls, tongue-numbing Chinese fried chicken and Kung Pao shrimp noodles that Ginger Pig fans already love, Hess said the Boulder spot will feature some unique menu items at this location, as a vegan version of its popular Korean dog cornflake.

If you want to watch Hess in action outside of restaurants, she’ll appear on an episode of Food Network’s “Beat Bobby Flay” on August 11.

Look for The Ginger Pig Boulder to open in October.
